The = individual plys are only about 1/16" thick, and I assume it's all birch lumber (top and bottom certainly are). It's a bit pricey, but quality usually is.   You can probably find it at larger lumber yards (most of the home-oriented outfits don't carry it). We use a local wholesale yard (a very big place that does a lot of its own milling) that has a small-lot purchase = division. Strangely enough, they frequently only get it in 5 x 5 sheets, but this happens to work well enough for most of our purposes.   This plywood is usually without voids and it's possible to plane it down = to just two or three plys without its becoming . . .well, splinters.
